Secret Recipe: SusieCakes' Holiday Eggnog Cheesecake

You may love the festivity of eggnog, but guzzling down egg yolks and cream—even when laced with booze—can prove less than merry. Get the sweet taste of the holidays in cheesecake form from perennial bakery favorite SusieCakes.

Holiday Eggnog Cheesecake

Serves 8-10

Crust:

1 1/4 cup graham crackers

1 teaspoon cinnamon

1/4 cup sugar

1/2 cup unsalted butter, melted

Filling:

2 pounds cream cheese

1 cup granulated sugar

6 eggs

2 teaspoons vanilla

2 teaspoons nutmeg, ground

1 teaspoon rum (optional)

Topping:

11/2 pints sour cream

1/2 cup granulated sugar

2 teaspoons vanilla

Nutmeg to taste

Crust:

1. Grease a 9-inch spring-form pan.

2. Blend graham crackers with cinnamon in food processor. Combine with sugar and butter.

3. Press mixture firmly into bottom of greased pan. 

Forming cheesecake:

1. Preheat oven to 375 degrees.

2. Cream the cheese with a beater or mixer. Add remaining ingredients and mix until smooth.

3. Pour into pan and bake in center of oven for approximately 40 minutes. Remove and cool for 15 minutes. 

Topping:

1. Mix sour cream, sugar, and vanilla.

2. Spread evenly over top of cake and return to oven for 8-10 minutes.

3. Remove, cool, and refrigerate.

4. Sprinkle with nutmeg before serving.
